Chewy oatmeal cookies are so yummy, but aren’t necessarily synonymous with healthy nutrition - until now! In this recipe, Danielle has transformed the traditional sugary oatmeal cookie into a nutritious power oatmeal cookie that’s just as sweet, chewy and comforting as its less healthy cousin. You’ll be adding in creamy sunflower butter, naturally sweet tahini and crunchy sesame seeds to give the cookies a healthy dose of protein and healthy fats as well as loads of B vitamins and plenty of minerals like calcium, magnesium, and iron. If cow’s milk doesn’t agree with your tummy, you’re in luck! Just two small cookies provide as much calcium as ¾ cup of cow’s milk!

Sesame Cherry Chews

Yields

15 - 20

Cook Time

10 minutes

Total Time

20 minutes

Ingredients
  • 1 1/2 c gluten-free rolled oats
  • 1/4 c tahini
  • 1/4 c sesame seeds
  • 1/2 c sunbutter (also known as sunflower seed butter)
  • 1/4 c applesauce
  • 1/4 c maple syrup
  • 1 egg
  • 1/4 tsp. Celtic sea salt
Optional

Optional additions for toddlers and grown-ups: 1/4 c enjoy life chocolate chips, 1/4 c dried cherries, minced

Directions
  1. Preheat oven to 375℉
  2. In a medium-sized bowl, add all ingredients and mix very well so that the oats and sesame seeds are saturated with the wet ingredients. If serving baby, keep the chocolate chips out of the mix until after you make a couple of plain cookies for baby. If the cherries are minced, you can include them in baby’s cookie batter.
  3. Line a cookie sheet with parchment paper. Drop tablespoonfuls of cookie mix on cookie sheet. Use a fork to flatten slightly.
  4. Cook for 8-10 minutes until lightly browned. Once removed from oven, cookies should harden a bit and be less delicate.
