In this recipe, Danielle has transformed the traditional sugary oatmeal cookie into a nutritious power oatmeal cookie that’s just as sweet, chewy and comforting as its less healthy cousin. You’ll be adding in creamy sunflower butter, naturally sweet tahini and crunchy sesame seeds to give the cookies a healthy dose of protein and healthy fats - as well as loads of B vitamins and minerals like calcium, magnesium, and iron. If cow’s milk doesn’t agree with your tummy, you’re in luck! Just two small cookies provide as much calcium as ¾ cup of cow’s milk!
