Roasted Sweet Potato Oat "Cookies"

Ingredients
- 1 ½ cups rolled oats
- 1 ¼ cups sweet potato, roasted and mashed
- ¼ cup virgin coconut oil, melted
- 6 Tbs. hemp seeds
- 2 tsp. cinnamon
- 1 tsp. vanilla
Optional
Optional ingredients for toddlers and grown-ups: ¼ cup mini chocolate chips, honey to drizzle
Directions
- *In advance, make mashed sweet potatoes. Cook under high pressure in Instapot for 20 minutes or roast sweet potatoes in glass dish on 375℉ for 60-90 minutes until very soft.
- Preheat oven to 350℉. Add coconut oil in oven-safe dish to melt during prep.
- Cover cookie sheet with parchment paper.
- In a medium-sized bowl, mix oats, hemp seeds and cinnamon.
- Add vanilla and mashed sweet potatoes. Mix very well until all oat mixture is wet from sweet potato.
- Split batter in half for babies vs. toddlers/grown-ups. Mix in chocolate chips to batch for toddlers/grown-ups.
- Use hands to form silver dollar-sized cookies and brush with melted coconut oil with brush.
- Cook for 20 minutes, remove baby’s cookies from the oven.
- Increase oven to 400℉ and cook chocolate chip cookies for up to another 15 minutes until just crisp on the outside.
NoteInfants under 12 months of age should not consume honey.
